Commercial kitchens stripped out: line equipment, walk-in coolers, vented hoods, grease ducting and the floor beneath it all. Refrigeration and grease are handled under their own rules, not thrown in a bin.
Two Regulated Materials
A restaurant strip-out contains two materials that cannot simply be skipped. Refrigeration equipment in walk-ins and on the line must be recovered by a certified technician before the unit is cut, and the recovery documented.
Grease in ducting and the hood run is a fire load and a contaminated waste stream with its own disposal route. Both are small line items that carry disproportionate fines when ignored, and both are routinely missing from the cheapest quote.
We book the refrigeration recovery before the crew mobilises and manifest the grease waste properly. Duct penetrations through the roof or slab are closed under core drilling and sawing, quarry tile and its bed lift under floor removal, and the rest of the unit runs as ordinary commercial demolition.

Under The Quarry Tile
A commercial kitchen floor is rarely one layer. Quarry tile over a thick mortar bed over a waterproof membrane over the structural slab is common, and stripping it back is slow, heavy work that generates far more waste than the floor area suggests.
Below it there are usually floor drains and grease interceptors that have to be capped or removed depending on what comes next. This is the part of a restaurant strip-out that most often runs over, so we core a test area during the survey and price from what is actually there rather than from an assumption.
Heavy build-up removal runs into slab removal territory where the bed is thick, waste leaves under disposal and recycling with weights recorded, and older premises settle asbestos removal before the floor is touched.
